Illinois native Ferzacca has designed the restaurant’s “new French-American” cuisine to be lighter and healthier than standard French fare, and weekly rotating menus like the wild mushroom menu or the Colorado-Grown Special keep diners guessing. But traditionalists need not fear: If the classics are what you crave, La Tour can satisfy. Ferzacca’s recommendation: “Lobster bisque or our house salad, mixed greens with toasted goat cheese and whole grain mustard vinaigrette; then have the Dover Sole Meunier with baby creamer potatoes, haricots verts and lemon brown butter sauce and finish with our flaming crème brûlée.”  </P> <P ALIGN="LEFT">Like his restaurant, Ferzacca is multifaceted: He opened an Italian restaurant, Zacca Za, in Avon in January 2007. As a breakfast cook early in his career, he was fascinated by the chefs who ran his kitchen. “I started writing everything down and made a career out of picking the minds of every chef I knew,” says the Roswell, New Mexico, native.</P> <P ALIGN="LEFT">Today, after culinary school and more than 20 years in the industry, it’s Burden who’s sharing information with eager learners at Beaver Run’s monthly cooking classes. Guests receive instruction in a five-course menu, then enjoy the meal complete with wine pairings.</P> <P ALIGN="LEFT">The inquisitive nature that inspired Burden early in his career keeps him exploring today, trying new foods and new experiences. A trip to Thailand inspired Thai Cedar Planked Salmon, available now at Spencer’s, Beaver Run’s flagship restaurant. “We start the salmon on the grill to get a nice crust then turn it over on a cedar plank brushing it with hoison sauce that has been seasoned with lemon grass, kaffir lime leaf and galangal root,” Burden says. “What you end up with is the essence of smoking cedar and a sweet spicy glaze.”</P> <P ALIGN="LEFT"></P> <P ALIGN="LEFT"><B>3) RYAN HARDY EXECUTIVE CHEF THE LITTLE NELL HOTEL ASPEN</B></P> <P ALIGN="LEFT">When you visit Montagna, one of the dining opportunities at the Little Nell Hotel, don’t expect to see tomatoes in winter. Ryan Hardy won’t allow it. He’s created a food philosophy that depends on fresh, local ingredients, all in season. </P> <P ALIGN="LEFT">It’s a passion that goes back to his childhood in Lexington, Kentucky. “My mom is a talented cook,” he says, and the Hardy kitchen was full of homemade goodies like biscuits, pies and jams. “These were things that I thought were reality everywhere — but then (in adulthood) I realized they weren’t reality anywhere,” he says. “It was disconcerting: The traditions were being lost that I had learned in my childhood.”</P> <P ALIGN="LEFT">He’s kept those traditions going in his two years at the Little Nell, emphasizing the “peasant traditions” that he loves. The menu features housemade cheeses, pastas and charcuterie, and in 2007 he bought an organic farm, which provides many of the ingredients for the Little Nell’s kitchen — produce, eggs, chicken and pork, to name a few. Guests can enjoy those ingredients on the “farmhouse menu,” a three-course meal in which every ingredient is local. At $39, it proves that good food doesn’t have to break the bank.</P>]]></description>
